It’s pancake day, check out these delicious and healthy recipes which will satisfy your cravings!
Orange Wheat Pancakes
Packed full of vitamin C and quick to whip up in minutes, these pancakes can be enjoyed morning or evening. These pancakes are also super high in sleep boosting potassium meaning they’re perfect for a late night supper as well.
Ingredients: 3 oranges, 1 1/4 cups of buttermilk, 2 eggs, 1 tsp vanilla extract, 2 tblsp of brown sugar, 2 tblsp oil of preference.
Just whisk everything together with the zest and juice of one orange. Serve warm with the rest of the orange segments!
Healthy Banana Pancakes
Made using just two ingredients, these pancakes are super simple and incredibly healthy, being both grain and refined sugar free!
Just whizz up 1 ripe banana with 2 free range eggs, fry in a little oil and enjoy fresh and piping hot!
Maybe add some fresh fruit or agave syrup for toppings. Lemon juice also works well!
Honey Apple Pancakes
The clue is in the name, these pancakes are super delicious!
Packed with vitamin C rich apple juice and fibre rich whole wheat flour, they’re brilliant enjoyed at breakfast or as an evening meal.
Ingredients: 1 1/4 cups of whole wheat flour, 2 tsp baking powder, 1/4 tsp of salt, 1/4 tsp of apple pie spice, 1/8 1 tsp baking soda, 1 egg.
For the topping! 3/4 of a cup of apple juice, 2 tblsp honey, tblsp of cooking oil.
Super Simple Savoury Pancakes
Pancakes don’t just have to be sweet! They can also be savoury, and are often delicious when packed with ingredients such as cheese and ham.
For a healthier take, these savoury pancakes are packed with protein rich eggs and smashed avocado.
Check out the ingredients below.
3/4 cups of flour, 1 1/2 tsp baking soda, pinch of salt, 1 1/2 cups of milk, 2 eggs, oil, avocado, fresh salsa and chilli.
Simply combine the dry ingredients with the eggs and milk and fry up the pancakes, they should resemble crepes and be thin.
Take them off the heat and liberally spread the avocado and fresh salsa onto them, before folding over. For extra flavour, add coarse sea salt and lemon juice to the salsa!
Healthy Vegan Pancakes
It can be tricky to enjoy pancakes day as a vegan, that’s why we’ve got a super simple dairy free pancake recipe to try out! Simply fry these up and liberally top with fresh fruit, soy yoghurt and syrup!
1/2 cups of flour, 2 tsp baking powder, 1/4 tsp salt, 1 1/2 cups dairy free milk, 1/4 cup apple sauce, 2 tblsp of oil for frying, 1 tsp sugar and 1 tsp vanilla extract.
