Healthy Oat Meal Banana Pancakes
Low carb, gluten free and packed full of potassium rich bananas and protein packed eggs, these pancakes are the best way to start your Sunday.
They’re also super easy to make as well!
Just blend two bananas, with two eggs, 200g gluten free rolled oats, a pinch of baking powder and a pinch of salt. You can also throw in some fresh berries for a pop of colour and a boost of vitamins and minerals.
Just fry the batter until golden brown and enjoy with more fresh fruit or maple syrup!
Peanut Butter and Banana Smoothie
This makes a great breakfast if you’re looking for something light to sip on whilst in bed on a relaxing Sunday morning. Just take two frozen bananas, a tea spoon of peanut butter and a splash of honey.
Add a splash of your favourite plant milk or dairy, and keep adding until smooth. Try adding a pinch of cinnamon for a boost in antioxidants.
Healthy Oatmeal Muffins
Definitely a recipe to prepare before your lazy Sunday, oatmeal muffins are delicious either warm or cool and spread with butter or jam.
Whilst not that healthy, they’re packed with fibre rich rolled oats and can also have additional fruit thrown in such as bananas, raspberries and sultanas for added vitamins.
Throw in some frozen blueberries for added moisture! The absence of butter really pulls down the saturated fat levels, whilst the boost in fibre is a great way to start the day. 200g plain flour, 200g rolled oats, 75g sugar, 3tsp baking powder, 1tsp cinnamon, 1tsp salt, 2 bananas, 2 eggs, 3tbsp sunflower oil, 250ml milk.
Smoked Salmon and Cream Cheese Bagels
A simple, yet effective and extremely delicious breakfast recipe.
Salmon, cream cheese and bagels are definitely a go-to on Sunday mornings and can be enjoyed from bed with a hot coffee. The clue is in the name, just combine everything together, even give your bagels a toast if you feel like it, and enjoy!
Packed full of omega 3 to power your brain for the rest of the week, this is a great staple for any weekend brunch or breakfast.
Definitely the healthiest of the selection.
